Campfire Roasted Tomato Pasta with Burrata & Broccolini

In late summer, there are plenty of tomatoes. Even if you don’t have plants growing in your garden, you can buy them at the farmer’s market. They offer the season’s reward with various names such as Sungold, Cherry, Pantano Romanesco, Black Zebra, Valencia, Beefsteak, Mortgage Lifter and San Marzano. I prefer Brandywine Pink because it comes out of the piles of tomatoes. And you should take advantage of this particular time because tomatoes are good for making simple pasta that has a wonderful and distinctive flavour as it tastes smoky, sweet and refreshing. The tomato is creamy and mixed with comfortable carbohydrates and in this dish, there is everything. 

Equipment For Campfire Roasted Tomato Pasta

In order to make Tomato Pasta with Burrata & Broccolini, you must use the following equipment:

  • Bring a grill stove or grate.
  • Bring tongs.
  • Bring a camp stove.
  • Bring a pot.
  • Bring a medium-sized pot.
  • Bring cooking spoons.

Ingredients

In order to make Tomato Pasta with Burrata & Broccolini, you must bring some ingredients:

For the sauce:

  • Take one medium-sized onion, and cut it into cubes.
  • Bring 4 cloves of chopped garlic.
  • Take 5 cups of ripe chopped tomatoes.
  • Bring ¾ of a teaspoon of salt.
  • Bring a tablespoon of honey.
  • Bring half a teaspoon of pepper.
  • Bring half a teaspoon of dried thyme.
  • Bring half a teaspoon of dried thyme.
  • Bring a quarter of a teaspoon of dried red pepper flakes.
  • Bring 6 ounces of dry bucatini.
  • Get 2 4 ounce burrata balls. 

For the roasted tomatoes:

  • Bring 3 pounds of cherry tomatoes.
  • Bring olive oil.
  • If you bring wooden skewers, you must soak them for at least half an hour.
  • You can add salt and pepper to your taste.

For the roasted broccolini:

  • Get a handful of broccolini about 6 ounces.
  • Get half a lemon.
  • Bring olive oil.
  • Bring salt and pepper according to your taste. 

Method

Making the sauce

All you have to do is prepare the fresh pasta sauce. Heat 2 tablespoons of olive oil over medium heat. Use the wide bottom pan instead of the pot when making the quick pasta sauce.

Cooking in the wide-surface skillet is faster, better and more heated. Once the oil is hot, add the onions with stirring and leave the onions until cooked for no more than 5 minutes or until the onions turn translucent.

Add a little chopped garlic to the mixture and leave it for a while minutes, but you have to make sure that the garlic does not burn because when the garlic burns, this will give a bitter taste to the recipe.

When you have finished adding chopped garlic to the sauce, add the chopped tomatoes in addition to a pinch of salt and stir the mixture well while raising the temperature, and keep stirring.

You will notice the tomatoes melting and the sauce drying out. At this point, add some broth and the boiled pasta will add some moisture to the sauce, then reduce the heat and sprinkle both the pepper and the dried spices for the sauce with some red pepper.

Roasting the tomatoes

While cooking the tomatoes, use the cherry tomatoes and cover them with olive oil to give them a wonderful flavour. If you don’t have a brush for greasing the tomatoes, use tissue with olive oil and apply the oil to the tomatoes, then sprinkle a little salt and pepper.

You can do the same with broccolini and lemon, brushing it or spraying it with olive oil and adding a little salt and pepper. Stir grilled tomatoes on skewers on a campfire grill while someone makes delicious grilled tomato pasta over a campfire with all the burrata and broccolini.

Now put the tomato, broccoli, and tomato skewers that you prepared previously on your grill, stirring all of these vegetables well until they are well cooked to enjoy the wonderful taste of them and after they are ripe, put them in several dishes.

While cooking the sauce and the tomatoes, bring a large pot of water to a boil on the camp stove. When you find that the water has started to boil, cook the bucatini according to its package instructions, then drain the pasta using tongs and incorporate it little by little into the sauce while stirring it well.

Putting it all together

When done cooking, mix the pasta and serve it on plates, pick up a skewer of tomatoes and place them on the pasta using your tongs and make two skewers for each dish you prepare.

Add grilled lemon and broccolini on the top of the plates, add a ball of burrata to each pasta plate, sprinkle with a little olive oil, pepper and salt, and add a little Parmesan cheese to the delicious pasta dish.
